Carrot, Cucumber and Kidney Beans (Rajma Salad) with Mint

Ingredients:

1 cup thinly sliced carrot

1 cup thinly sliced cucumber

½ cup soaked and boiled kidney beans

½ cupsliced spring onions

Preparation time 15minutes and makes 4 servings

Method:

Mix all the ingredients in a bowl and toss them well. Keep the mix in the refrigerator for almost an hour. The salad will be then ready to serve. To make it more nourishing, you can use the mint and honey dressing. You can use little lemon juice and salt to taste.

This salad is rich in Vitamin A from carrots and Mint with Proteins from Kidney beans

This salad can be prepared in about 15minutes and makes 4 servings.
